These sounds delicious! Our favorite go to quick and easy meal is chicken quesadillas. I always keep pre-cooked grilled chicken strips in the freezer. So we warm them up in some salsa on the stove and then use them in quesadillas, stuffed with cheese, avocado and refried beans. They are super easy and my kids love them.

What a round-up! I work long hours and need quick and easy dinners. Meal planning helps, but there are times I think I’m superwoman (I’m not!). Will have to add some of these ideas to my plans. Walking tacos, Spicy shrimp tacos, Creamy chicken tacos all jump off the page at me right away!
